Consider the Ham Steak. It will feed you for a week.

Every couple of months I buy beautiful ham steaks from Pork Lady for around $10 for a little over 2 pounds.

Day 1:  Hack off some and grill it, serve with new potatoes and broccoli for an easy dinner.

Day 2:  Chop some into cubes, combine with green onion, feta, and eggs to make a crustless quiche or these egg muffins that my friend V. recommended.  Breakfast for a couple of days is handled.

Day 3:  Use the bone + white beans + kale + onion + garlic + chicken broth to make a hearty soup.

I also get my eggs from Pork Lady, and I love the way the eggs taste at this time of year.  When you get all your eggs from the same farm, you can see how they change over the course of the year based on what the chickens are eating.  In the winter, they stay inside and eat more corn and other meal, so the yolks are relatively paler.  This time of year they’re eating all the bugs and worms they want, and the yolks are silky, dark yellow, almost orange.  Amazing.

  1. You know, I’m not even that big a fan of ham, but I’m completely sold reading this.

    I would love to get my eggs the way you do.

    • I can’t go back to supermarket eggs. There’s also a guy at the Green City Market here in Chicago who has amazing, giant eggs with orange yolks.

      If you can get a really good egg, try this:

      Toss asparagus with olive oil and a clove of finely minced garlic and sea salt. Roast it in the oven.

      Poach the egg, or fry it over-easy. Serve it on top of the asparagus. Some shaved parmesan cheese and freshly ground pepper would not go amiss.
