Crustless quiche with smoked salmon, asparagus, and goat cheese

This should be amazing, but it’s just so-so.

I chopped up some asparagus and about 2 oz of smoked salmon and put those things in a buttered pie dish.  I poured in 4 eggs, beaten with a splash of milk and a sprinkle of fresh parmesan, and about 2 oz of crumbled goat cheese.  I salted and peppered.  I baked it in a 350 degree oven for about 30 minutes.

I really love all these ingredients, but it needs something else.  It’s just ok. I deem it “acceptable.” What would be better next time?  Chives?  Chopped red onion?  Dill? Fresh basil?  Roasted red peppers?

    • If you were to have leftover goat cheese and smoked salmon, and fresh dill, and finely chopped red onion, and a good piece of crusty bread – imagine the breakfast you could make!

      Fortunately I have all of these things in the house. Glory.

  4. This looks amazing and has some of my favorite things in it but I don’t know – quiche, like omelet, just don’t do it for me. The only quiche I have ever liked had brie in it which made it more moist.

  5. I made this today and tweaked the ingredients just a bit. I added 2 tbls of sour cream and a bit of dill – mixed it up with eggs. I also added grated sharp cheddar to the top. I changed the goat cheese to fresh mozzarella because I don’t really like the earthy taste of goat cheese, but that’s just a personal preference. It turned out amazingly and I can’t thank you enough for posting this! It’s a great base recipe and you could go a lot of different ways with it!!
